Brown Brothers 1889 Cabernet Sauvignon (King Valley) (2016)

The 2016 Cabernet’s depth of colour and intensity of flavour show tremendous concentration and it will cellar for up to seven years from vintage.

 

Recommended food pairings: This elegant red wine makes a delicious partner to a wide variety of meat dishes.

It would make a perfect partner to rare herb encrusted eye fillet of beef with roasted vegetables, or with an aged cheddar or parmesan cheese at the end of the meal.

 

Growing Conditions: The 2017 Cabernet Sauvignon was sourced from a number of sites throughout Victoria including our Heathcote vineyard.

It was harvested in parcels from mid March to mid April at a range of baumé levels from 12.7 to 14.6.

 

Winemaker: Geoff Alexander

 

Winemaking notes: Different parcels of the wine spent 12 months in French oak barriques of which 20% was new. It was bottled with an alcohol of 14.0%, a pH of 3.5 and an acid level of 6.3g/L.

Aroma:Aromas of red currant, dried herbs and some dusty, earthy undertones.
Palate:The juicy red berry fruits follow through to the palate, which is supple and savoury with fine, powdery tannins.
